塩釜 (和菓子)




塩釜（しおがま、志ほがま）は、宮城県の塩釜地方に古くから伝わる和菓子。打ち物菓子に属する干菓子で、みじん粉に砂糖、粉末にした紫蘇や海藻などを混ぜ、木型で押し固めて棹状に作る。折り取って食べられるように碁盤目状に切り口が入れてあり、このことからかつては算木菓子、算木餅などとも呼ばれた[1]。塩竈市や仙台市の名産であるが、現在は全国で作られている[2]。


鹽竈神社の祭神で、塩の製法を伝えたと言われるシオツチノオジにちなむものとされる[1]。1769年（明和6年）に越後屋の初代喜三郎が仙台藩主に献上したという[2]。
